Instant Pot Carnitas

No time or energy to cook? InstantPot to the rescue

I love using my InstantPot. It's a great way to get a healthy dinner on the table in a short period of time.  Yesterday I was super busy and super tired, so an easy dinner was definitely on the agenda.  It's so tempting to resort to junk food or unhealthy take out on days like this, but it just makes our autoimmune issues worse.  So the Instant Pot is a godsend. I also love when I can incorporate oils into my recipes.  The flavor is amazing, and since they stay good for AGES, you can always have them on hand ready to go.  I love to cook with fresh seasonings, but that isn't always very practical

And this dinner is crazy simple and CRAZY delicious.  We put the pork in the InstantPot and then went out and ran the last two errands of the day.  Came home and finished things up in about 20 minutes

1) Shred pork and put under broiler

2) Open container of organic baby spinach

3) Chop onions and tomatos

4) Slice avocado

5) Shred cheese (I didn't use it but the rest of my peoples did)

We had corn tostados to make the carnitas on, or the meal is just as tasty without on a bed of the spinach.

ingredients

  • 2 pounds pork shoulder or butt, cubed
  • 1 teaspoon sea salt
  • 2 drops doTERRA cumin essential oil
  • 1 drop doTERRA oregano essential oil
  • 1 drop doTERRA black pepper essential oil
  • 1 white onion, roughly chopped
  • 3 garlic cloves, minced
  • 5 drops doTERRA Lime essential oil
  • 1 cup orange juice
  • 1 cup broth

Press Sauté function on instant pot. Once hot, add pork butt and brown on all sides for about 10 minutes. Add the rest of the ingredients. Cook on high pressure for 40 minutes. Once time is up, let the pressure release on its own, then remove lid.  (We were out so it stayed on warm for about 45 minutes)

Turn oven on to broil.Use a slotted spoon to remove the fall-apart meat and onions, and place on a baking sheet. Use two fork to pull apart the meat slightly. Place under the broiler to cook for just a few minutes or until the pork begins to brown and crisp.instant pot carnitas

Serve with tortillas, spinach, tomatoes, onions, avocado, etc.
